Chef Craig joins Savoury as a seasoned Executive Chef with extensive hotel experience. He is skilled at utilizing fresh, local ingredients in classic dishes which aligns with the Eat Well Menu exclusive to Westin Hotels.
He began his career in Victoria, BC where he apprenticed at the Fairmont Empress and the Delta Victoria Ocean Pointe. Most recently, he was the Executive Chef at the Delta Grand Okanagan. Graduating with honours from Camosun College in Victoria, Chef Craig went on to compete internationally and became the first Canadian Chef to bring home a gold medal from the prestigious Chaine des Rotisseurs Jeune Chef Concours in 2006. His more recent accolades include the Marriott ACE Award as Best Executive Chef, Canada (2017), and the Silver Medal at the Bocuse D'or National Competition (2016).
Prior to joining the Delta Grand Okanagan, Craig held roles at the Ritz Carlton Toronto and the Delta Toronto. He brings international experience to The Westin Harbour Castle Toronto having spent time in France (the 2-Michelin Star Abbaye Saint Ambroix, Bourges) and Australia (the Four Seasons Hotel Sydney).
